Batch it crazy

I mentioned in my Sunday newsletter a couple of weeks ago that I recently accidentally did some batch cooking. Batch cooking is one of those very practical activities for people with busy lives. Make a huge pot of something on a Sunday night, divide it into portions, and stick it in the freezer for healthy, wholesome last-minute meals throughout the week. I am usually not that organized (nor is there room in our overstuffed freezer) to get around to cooking en masse. But last Saturday evening came about and I had all the ingredients gathered to make Jamie Oliver's Chickpea and Squash Casserole (see video) from his new book of one pot dishes, ONE. I love nothing more than a meal that involves just a little chopping and a lot of can opening. Brilliant. I had assumed that this dish would be enough for dinner for our little family of three and started in on it with hardly a care in the world.
